Cultured Wheat Flour
Cultured Wheat Flour is a clean label preservative primarily for bakery use where wheat is already used to help combat mold and yeast growth. Cultured wheat flour branded MicroGARD 910F is manufactured by Dupont food ingredients. This cultured wheat flour is easily blended into dry mixes or even bakery fillings for use in bread, rolls, pastry, tortillas, and general baked goods.
Suggested starting use rate 0.75-1.0% wt/wt or 0.7% Baker's percentage
